This silky French butter sauce gets a seasonal twist from unfiltered apple cider and a splash of apple cider vinegar, creating a reduction that's bright, slightly tangy, and deeply aromatic. A single sprig of fresh thyme does quiet but powerful work during the simmer, lending an herbal note that makes the whole thing feel restaurant-worthy. The real magic happens when cold butter goes in cube by cube — constant whisking transforms that tart reduction into something luxuriously creamy and glossy. It's the kind of sauce that makes a simple piece of fish or a roasted chicken breast look like it came off a white-tablecloth menu. Because it's built entirely from butter, fresh cider, vinegar, shallot, and thyme, there's nothing here to second-guess — no grains, no fillers, just clean, classic technique. A finishing scatter of snipped chives adds a pop of color and a mild oniony lift that ties everything together beautifully.

Combine the apple cider, apple cider vinegar, minced shallot, thyme sprig, and salt in a small saucepan over medium heat. Bring to a simmer and cook until the liquid has reduced to about 2 tablespoons and the shallot is very soft, 8–10 minutes.
Remove the thyme sprig and discard it. Pour the reduction through a fine-mesh strainer into a small bowl, pressing the shallot solids to extract all the liquid, then discard the solids. Return the strained reduction to the saucepan over the lowest heat setting.
