There is something undeniably luxurious about a silky beurre blanc, and this apple cider version brings a gentle sweetness and brightness that feels just right when you're craving something a little special. The base is a simple reduction of unfiltered apple cider, apple cider vinegar, and shallot — cooked down until concentrated and fragrant — before cold butter is whisked in gradually to create that signature creamy, velvety sauce. Because the ingredient list is short and completely whole, you know exactly what's going into every spoonful, which matters when you're being thoughtful about what you eat. The technique of adding butter slowly over very low heat is the key to keeping the sauce smooth and stable rather than greasy or broken, so patience here really pays off. It's gorgeous spooned over simply cooked fish, poultry, or roasted vegetables, and a handful of fresh chives on top makes it feel restaurant-worthy with almost no extra effort. This is the kind of sauce that turns a quiet weeknight dinner into something worth sitting down for.

Combine the apple cider, apple cider vinegar, minced shallot, thyme sprig, and salt in a small saucepan over medium heat. Bring to a simmer and cook until the liquid has reduced to about 2 tablespoons and the shallot is very soft, 8–10 minutes.
Remove the thyme sprig and discard it. Pour the reduction through a fine-mesh strainer into a small bowl, pressing the shallot solids to extract all the liquid, then discard the solids. Return the strained reduction to the saucepan over the lowest heat setting.
