This silky French butter sauce gets a bright, seasonal twist from unfiltered apple cider and a splash of apple cider vinegar, building a flavor that's tangy, rich, and just a little bit sweet in the most natural way possible. Every ingredient here is exactly what it says it is — fresh cider, real butter, shallot, thyme — so there's no need to squint at a label wondering what's been snuck into a bottled sauce or glaze. The technique is all about patience: reducing the cider down to a concentrated syrup, then coaxing cold butter in cube by cube until the whole thing turns glossy and luxurious. That low-and-slow whisking is what keeps the emulsion stable and the sauce tasting clean rather than greasy. It's the kind of finishing sauce that makes a simple piece of fish or roasted chicken feel genuinely restaurant-worthy. A scatter of fresh chives at the end adds a little color and a mild oniony pop that ties everything together beautifully.

Combine the apple cider, apple cider vinegar, minced shallot, thyme sprig, and salt in a small saucepan over medium heat. Bring to a simmer and cook until the liquid has reduced to about 2 tablespoons and the shallot is very soft, 8–10 minutes.
Remove the thyme sprig and discard it. Pour the reduction through a fine-mesh strainer into a small bowl, pressing the shallot solids to extract all the liquid, then discard the solids. Return the strained reduction to the saucepan over the lowest heat setting.
