Beurre blanc is one of those classic French sauces that sounds intimidating but rewards patience with something genuinely stunning — silky, rich, and bright all at once. This version leans on unfiltered apple cider and a splash of apple cider vinegar to build a reduction that gives the finished sauce a subtle fruity tang and golden depth. Every ingredient here is exactly what it looks like: real cider, a shallot, fresh thyme, cold butter, and a handful of chives. There are no dyes, no artificial additives, no mystery pantry shortcuts — just clean, whole ingredients doing beautiful work together. The technique is the magic: cold butter whisked in slowly over very low heat creates that creamy, opaque emulsion that coats a spoon like velvet. It's the kind of sauce that makes a simple piece of fish or roasted vegetables feel like a restaurant plate. If you've been nervous about making beurre blanc from scratch, this straightforward ingredient list makes it the perfect place to start.

Combine the apple cider, apple cider vinegar, minced shallot, thyme sprig, and salt in a small saucepan over medium heat. Bring to a simmer and cook until the liquid has reduced to about 2 tablespoons and the shallot is very soft, 8–10 minutes.
Remove the thyme sprig and discard it. Pour the reduction through a fine-mesh strainer into a small bowl, pressing the shallot solids to extract all the liquid, then discard the solids. Return the strained reduction to the saucepan over the lowest heat setting.
