Halva has a long, storied history across the Middle East and Mediterranean, and this version leans into that tradition with a few warming spices that make it feel genuinely special. Tahini forms the rich, nutty backbone here, while honey is cooked to the firm-ball stage before being streamed in — that precise candy-making step is what gives the finished slab its signature crumbly-yet-fudgy texture. Turmeric adds a gorgeous golden hue and a subtle earthiness, cinnamon and cardamom round out the warmth, and the toasted almonds scattered throughout give every slice a satisfying crunch. Because the entire recipe is built on tahini, honey, nuts, and spices, there is no flour or grain of any kind in sight — no substitutions needed, no ingredient swaps to second-guess. Store-bought confections can be a minefield of hidden additives and shared-facility warnings, so making this at home puts you fully in control of what goes into it. The process is surprisingly approachable: toast, boil, beat, and chill. Slice it cold, serve it at room temperature, and watch it disappear faster than you expected.

Line an 8×4-inch loaf pan with parchment paper, leaving an overhang on the long sides. Place the tahini in the bowl of a stand mixer fitted with the whisk attachment (or use a large bowl with a hand mixer) and set aside at room temperature.
Toast the chopped almonds in a dry medium saucepan over medium heat, stirring frequently, until golden and fragrant, about 4–5 minutes. Transfer to a small bowl and set aside. Wipe out the saucepan.
