1 tsp kosher salt
½ tsp black pepper
1 tsp smoked paprika
1 tsp garlic powder
½ tsp onion powder
½ tsp dried thyme

Instructions

1
Pat the chicken completely dry with paper towels, including the cavity. Dry skin is essential for browning — any surface moisture will steam rather than crisp.
2
In a small bowl, stir together the kosher salt, black pepper, smoked paprika, garlic powder, onion powder, and dried thyme.
