Cut each peeled sweet potato in half lengthwise, then cut each half into planks about 1/4 inch thick. Stack the planks and cut lengthwise into fries roughly 1/4 inch wide and 3–4 inches long. Uniform size is important so the fries cook evenly.
Place the cut fries in a large bowl. Add the olive oil, smoked paprika, garlic powder, kosher salt, black pepper, and cornstarch. Toss until every fry is evenly coated.
