Dried black pepper can sometimes contain mold toxins, but the trace amount used here is so small that it is likely tolerated by many. Preheat the air fryer to 375°F (190°C) for 3 minutes. Rub each beet lightly with a small amount of the olive oil, then wrap each one individually in a square of aluminum foil, sealing the edges tightly.
Arrange the foil-wrapped beets in a single layer in the air fryer basket. Cook at 375°F (190°C) for 40 to 45 minutes, until a paring knife slides into the center of the largest beet with no resistance.
