Core each apple from the top using a melon baller or sturdy spoon, removing the seeds and creating a cavity about 1 inch wide and 1 inch deep — leave the bottom of the apple intact so the filling stays in place.
In a small bowl, stir together the melted butter, brown sugar, rolled oats, cinnamon, nutmeg, and salt until combined. Fold in the chopped walnuts or pecans, if using.
